The mornings are starting to feel a little chilly here. Not fall-like chilly; it’s more like high 70s weather that tricks the mind into thinking it’s chilly since it has been in the high 90s up to this point. Oklahoma will take it though.
I have started to see more morning joggers. I spend more time with Nala outside in the mornings. When I forget to put the sun visor in the window, I don’t feel too bad. Basically, cooler mornings make me extremely happy.
So happy that I don’t mind turning on the oven in myhotboxkitchen and baking these little cuties.
Seriously, aren’t they adorable? I love breakfast food that reminds me of pizza and this recipe is one of my favorites.
Pizza breakfast baskets are the perfect brunch or leftover food because they can be enjoyed at room temperature or be reheated and still taste great.I usually start my mornings with tea and a fresh nutrient dense juice. After drinking juice, it can take awhile before I am hungry enough to eat a meal. D-Money is the exact opposite. He wakes up ravenous and can drink juice, eat a meal or two and be completely fine. We make two breakfasts a lot more than I care to admit. He or I will make breakfast for him first thing in the morning and when I get hungry, we make one for me. However these pizza breakfast baskets allow for us to make one breakfast that tastes perfectly delicious when reheated. They hold their shape and make great lunches as well.
This is a fun recipe that you should have fun with! I will list the ingredients I use most often but feel free to add or subtract whatever you want. Just remember that your pizza breakfast baskets should reflect your favorite pizza and you will create something delicious! It’s so simple that children can help make breakfast with minimal mess. Enjoy!
- Whole grain tortillas cut in half (one whole tortilla for every basket)
- Eggs (one egg per basket)
- Pizza sauce
- Sliced mushrooms
- Shredded cheese
- Salt and pepper
Preheat oven to 350 degrees. Lightly spray a large mouth cupcake tin and place the tortillas in the tin. Place one half of tortilla on one side of tin and the other on the other side. They should overlay and you shouldn’t see the bottom of the tin at all. Add in some mushrooms, pizza sauce, cheese and crack an egg on top. Sprinkle with oregano, salt and pepper. After you have made as many pizza baskets as your heart wishes, place the muffin tin in the oven and let cook for 12-17 minutes depending on how you like your eggs. Can sprinkle with more cheese and serve warm or cold.
