Sun dried Tomato Hummus

I love hummus but hate spending 5 bucks on the pre-made stuff. So one day I thought, I can make it at home! How hard can it be?

Well, the first time I made hummus at home was sort of a disaster; I used way too much tahini and couldn’t fix the overbearing peanut-y taste despite shoveling in a ton of spices. After that attempt, I wondered if store brought was the only way to go. I tried a few more times but was never satisfied. The texture was too gritty. The flavor was too bland. Hummus became my kitchen enemy.

One day D-Money and I were talking about grocery shopping and he wanted to add hummus to our list. Before writing it down, I looked in our pantry and saw that we had chickpeas and olive oil. One more go I thought.

I am obsessed with sun dried tomatoes and believe they can add a kick to any dish. I got the idea to add them in when I stumbled across a recipe that used them to make a creamy and rich dipping sauce. Why not add them to my hummus attempt? What could it hurt?

It hurt nothing; it made the best hummus that mylittlehotboxkitchen ever made. It changed my life.

Okay, so maybe it didn’t change my life but it did improve it. Sun dried tomato hummus is my go to hummus recipe. I use it on sandwiches, I use it to dip veggies and crackers in, I eat it by the spoonful. The recipe is so simple but the flavor is complex awesomeness.

When my brother in laws came to visit last month, I made the hummus and my brother in law, GQ, liked it so much that he asked to take the reminder back to STL with him. Basically what I am getting at is that this is good stuff y’all.

My quest to find the perfect classic hummus recipe is still ongoing but this sun dried tomato hummus recipe is allowing me to eat while on the quest.

Ingredients

1 can chickpeas
3 or 5 sun dried tomatoes with oil olive
oil fresh lemon juice
salt and pepper
paprika
minced garlic

Directions

In a blender or food processor, add all ingredients and mix well until the mixture reaches a creamy consistency.

Top your favorite sandwiches with this hummus or eat it by the spoonful. No one will judge you.
