A friend of mine posted a status about an amazing experience with blueberry mint lemonade that she tried at a restaurant. My first thought was that I must make that now.
Thankfully I had the perfect excuse to make it over the weekend when my handsome brother in laws came to visit.
This is a refreshing lemonade and is perfect on a hot summer day. We made it adult by adding a shot of vodka in each glass.The mint masks the harsh smell of vodka like a dream.
However, it’s amazing without the vodka. Trust me, I just made it again this morning.
Ingredients (makes a concentrated 1 gallon or pitcher):
9 lemons with skin removed, save one of the clean lemons skins
1 pint blueberries
1/2 cup sugar (more if needed, I like sour lemonade but you may like to sweeten it up)
12 single mint stems with leaves
6 cups of water
Using a juicer, juice lemon, blueberries and mint. Juice the clean lemon skin. Add the mixture to a pitcher, and stir in water. At this point you can either drink as is or thin it out more with additional water. It will be heavily concentrated if you do not thin it out.
I personally like it both ways. Garnish and serve on a hot summer day.
